  • 2 tbsp olive oil
fresh rosemary
  • 2 fresh rosemary sprigs
Italian seasoning
  • 1 tsp Italian seasoning
red pepper flakes
  • 0.5 tsp red pepper flakes
parmesan rind (optional)
  • 1 parmesan rind Optional, for deeper savory flavor.
for serving
  • 0.25 cup parmesan Use shaved or grated.
  • 1 lemon For finishing juice and brightness.
  • 1 tbsp olive oil Extra drizzle for serving.
salt and pepper
  • 1 tsp salt To taste.
  • 0.25 tsp black pepper To taste.

Equipment

  • 1 Dutch oven

Method

Sauté the base
  1. Heat 2 tbsp olive oil in a large pot over medium heat, then sauté the diced onion for 5 minutes until softened and lightly translucent.
  2. Add the minced garlic and red pepper flakes, then cook for 2 minutes until fragrant and sizzling.
Simmer the soup
  1. Add the drained chickpeas, fire-roasted diced tomatoes, vegetable broth, rosemary sprigs, Italian seasoning, and parmesan rind (if using) to the pot and bring to a boil.
  2. Reduce to a simmer and cook for 20 minutes, stirring occasionally, until the flavors deepen.
  3. Remove the rosemary sprigs and the parmesan rind after simmering, leaving the broth infused.
  4. Mash or blend about a third of the chickpeas in the soup to create a thicker consistency.
Wilt kale and finish
  1. Add the chopped kale and cook for 5 minutes until wilted and tender.
  2. Season with salt and black pepper to taste, then finish with lemon and drizzle with olive oil; serve with parmesan shavings.

Notes

For best texture, mash/blend only about one-third of the chickpeas so the rest stay intact. Store leftovers in the refrigerator for up to 4 days; reheat gently on the stove, adding a splash of broth if thickened. Freezing is not ideal because kale can soften, but it can be frozen up to 2 months if needed. For a dairy-free swap, omit the parmesan rind and finish with extra olive oil plus a squeeze of lemon and extra black pepper.
