Ingredients
  

Mocha espresso custard base
  • 2 cup heavy cream
  • 1 cup whole milk
  • 0.75 cup granulated sugar
  • 5 egg yolks
  • 2 tbsp instant espresso powder
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 1 cup toasted whole almonds
Fudge ribbon
  • 0.33 cup hot fudge sauce warm before drizzling

Method
 

Cook and flavor the espresso custard
  1. Heat the heavy cream and whole milk in a saucepan and whisk in the instant espresso powder until fully dissolved.
  2. In a bowl, whisk the egg yolks with the granulated sugar, then slowly whisk the hot cream mixture into the yolks.
  3. Return everything to the saucepan and cook, stirring constantly, until the custard reaches 175F.
  4. Strain the custard, then whisk in vanilla and salt, and let it cool completely.
Chill, churn, and fold in almonds
  1. Cover and refrigerate the custard for 4 hours until well chilled.
  2. Churn in an ice cream maker according to the manufacturer’s instructions, adding the toasted almonds in the last 5 minutes for even crunchy pieces.
Layer with fudge ribbons and freeze
  1. Spoon the churned ice cream into a freezer-safe container and drizzle the warmed hot fudge sauce between layers.
  2. Swirl the top and through the layers with a knife to create visible fudge ribbons.
  3. Freeze until firm, until scoopable and set through the center.

Notes

For the smoothest custard, keep heat gentle while cooking to 175F and stir constantly so the yolks don’t scramble. Refrigerate the finished ice cream in a sealed container up to 2 weeks; freezing works well (best within 1 month). For a dairy-light swap, use half-and-half and skip cream-heavy richness, but expect a softer, less dense texture.
