Jalapeño Peach Jam

Jalapeño peach jam is a glossy, golden-orange sweet heat preserves made with crushed peaches, minced jalapeño flecks, and a pectin set. Boiled to a full rolling boil for a quick 1-minute cook, it jars up for toast, cheese boards, and grilled meats.

Ingredients
  

Peaches
  • 4 cup fresh peaches Peeled and finely diced; use a potato masher to lightly crush during cooking.
Jalapeños
  • 3 jalapeños Minced. Leave seeds in for hotter jam; remove seeds for mild heat.
Sugar & Pectin
  • 3 cup granulated sugar Added all at once after the first full rolling boil.
  • 3 tbsp fresh lemon juice Used to balance sweetness and help gelling.
  • 1 package (1.75 oz) powdered pectin Use powdered pectin package for proper set with the boil timing.

Method
 

Cook the jam
  1. Combine the diced peaches and minced jalapeños in a large saucepan over medium heat and crush slightly with a potato masher, until the mixture looks juicy and partially broken down (glowing golden-orange potential starts forming).
  2. Stir in the lemon juice and powdered pectin until fully incorporated and no dry pockets remain, watching the mixture turn slightly thicker and more cohesive.
  3. Bring the mixture to a full rolling boil over high heat, then add all the sugar at once while the boil continues.
  4. Return to a full rolling boil that cannot be stirred down and cook for exactly 1 minute, stirring constantly; the jam should look glossy and slightly darker as it thickens.
Jar or refrigerate
  1. Ladle the hot jam into sterilized half-pint jars, leaving 1/4-inch headspace and keeping the surface glossy as it settles.
  2. Wipe jar rims clean, then seal with lids and rings, pressing to ensure a tight fit.
  3. Process jars in a boiling water bath for 10 minutes, or skip canning and refrigerate for up to 3 weeks without processing.

Notes

For best set, keep the boil truly rolling—if it doesn’t stay at a full rolling boil, the pectin may not gel correctly. After processing, store sealed jars in a cool, dark place; refrigerated (unprocessed) jars keep up to 3 weeks. Freezer option: freeze jam in freezer-safe containers (leave headspace) for up to 3 months. Dietary swap: for reduced sugar, only use a pectin specifically labeled for lower-sugar jam, since regular powdered pectin needs the full sugar amount for proper gelling.
