Prep and preheat
- Preheat oven to 400°F and line a large baking sheet with parchment or foil.
- Whisk honey, minced garlic, soy sauce, Dijon mustard, olive oil, and red pepper flakes until the sauce looks smooth.
Combine and roast
- Toss kielbasa rounds, broccoli florets, red bell pepper, green bell pepper, zucchini, and red onion with the honey garlic sauce until evenly coated.
- Spread the mixture on the baking sheet in a single layer so the vegetables roast instead of steam.
- Roast for 20-25 minutes, tossing halfway, until vegetables are caramelized and kielbasa is golden.
Finish
- Scatter sesame seeds and green onions over the hot sheet pan and serve immediately.
Notes
For maximum caramelization, keep everything in a single layer and don’t crowd the pan—use a second sheet pan if needed. Store leftovers in the refrigerator up to 3 days; reheat in a 425°F oven until warmed through. This recipe freezes well only for the kielbasa (up to 1 month), but the vegetables are best fresh. For a lighter option, use reduced-sodium soy sauce and reduce honey to 3 tbsp for a thinner, less-sweet glaze.
