  • 12 English muffins
Eggs
  • 12 eggs
Sausage
  • 12 breakfast sausage patties (or bacon slices) Use sausage patties or bacon slices; cook according to package directions.
Cheese
  • 12 American or cheddar cheese Slice into 12 cheese portions.
Seasoning
  • 0.5 tsp salt and pepper to taste Season eggs lightly; adjust to preference.
Butter
  • 1 tbsp butter for cooking eggs Use to help prevent sticking and add flavor while baking.
Cooking spray
  • 1 cooking spray For greasing the muffin tin.

Method
 

Cook sausage
  1. Cook the breakfast sausage patties according to package directions, then set aside while you bake the eggs.
Bake eggs in the muffin tin
  1. Spray a muffin tin with cooking spray, then crack one egg into each cup and break yolks if desired.
  2. Season the eggs with salt and pepper, then bake at 350°F for 12-15 minutes until set.
Toast muffins
  1. Lightly toast the English muffins so they hold up during freezing and reheating.
Assemble and freeze
  1. Assemble each sandwich with muffin bottom, egg, sausage patty, cheese slice, and muffin top.
  2. Wrap each sandwich individually in plastic wrap, then place into freezer bags.
  3. Freeze sandwiches for up to 3 months; to reheat, unwrap and microwave for 1-2 minutes until heated through.

Notes

Pro tip: For the most even reheating, keep sandwiches in a single layer in the freezer bag until fully frozen. Store in the freezer for up to 3 months; freezer baking is not affected by texture when wrapped tightly. Dietary swap: Use turkey sausage patties (or cooked turkey bacon) to reduce saturated fat without changing the method.
