Chicken tortellini soup base
  • 1.5 lb chicken breast Cooked and shredded.
  • 20 oz refrigerated cheese tortellini
  • 3 cup baby spinach
  • 3 carrots Sliced.
  • 1 onion Diced.
  • 4 clove garlic Minced.
  • 6 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 0.5 parmesan For serving.
  • 0.25 fresh basil For serving.
  • salt To taste.
  • pepper To taste.

Method
 

Sauté vegetables
  1. Heat the olive oil in a large Dutch oven over medium heat, then sauté the onion and sliced carrots for 5 minutes until softened and fragrant.
  2. Add the minced garlic, Italian seasoning, and dried basil, and cook for 1 minute, stirring constantly, until very aromatic.
Simmer soup
  1. Pour in the chicken broth and bring it to a boil, letting the pot bubble steadily for 30-60 seconds.
  2. Add the refrigerated cheese tortellini and cook for 4-5 minutes until just tender, adjusting heat to keep a gentle boil.
Finish and season
  1. Stir in the shredded chicken and baby spinach, then cook for 2-3 minutes until the spinach wilts and the chicken is heated through.
  2. Season with salt and pepper to taste, then serve immediately with generous parmesan shavings and fresh basil on top.

Notes

For best texture, stop cooking the tortellini as soon as it’s just tender so it doesn’t soften further in leftovers. Store in an airtight container in the refrigerator up to 3 days; reheat gently with a splash of broth if needed. Freezing is not recommended because tortellini can turn soft. Dietary swap: use turkey or a lean chicken alternative if you want a lighter protein option while keeping the broth and topping the same.
