Bubblegum custard base
  • 2 cup heavy cream
  • 1 cup whole milk
  • 0.75 cup granulated sugar
  • 4 egg yolks
  • 1 tsp bubblegum flavoring extract
  • 0.5 tsp vanilla extract
  • 0.25 tsp salt

  • 0.5 cup rainbow sprinkles
  • 0.25 cup small bubblegum pieces Optional; fold in during the last 2 minutes of churning.

Method
 

Make the custard
  1. In a saucepan, heat the heavy cream and whole milk until steaming, then slowly whisk the hot mixture into the egg yolks that have been beaten with the granulated sugar. Keep whisking to avoid scrambling the yolks, aiming for a smooth, glossy mixture.
  2. Return the custard to the saucepan and cook, stirring constantly, until it reaches 175F. As soon as it thickens enough to coat a spoon, strain it and stir in the bubblegum flavoring extract, vanilla extract, and salt.
  3. Stir in pink food coloring to reach your desired vivid bright pink color, then cool completely at room temperature before refrigerating for 4 hours. Chill until thoroughly cold so the custard churns smoothly.
Churn and freeze
  1. Churn the chilled custard in an ice cream maker until it becomes a soft-serve consistency. For best flavor and texture, fold in the rainbow sprinkles and small bubblegum pieces during the last 2 minutes.
  2. Transfer the churned ice cream to a container and freeze until firm. Freeze until scoopable with no wet pockets in the center.

Notes

Pro tip: Strain the hot custard for a silky texture before chilling, and add pink food coloring gradually so you keep the color vivid without overshooting. Store covered in the freezer up to 2 months; for best scoopability, let it sit at room temperature for 5 minutes. Freezing is recommended (no reheating). For a dairy-light option, use lactose-free milk/cream and keep the same custard method.
