Ingredients
  

Rigatoni or penne
  • 1 lb rigatoni or penne
Butternut squash
  • 2 cup butternut squash, cubed
Brussels sprouts
  • 2 cup Brussels sprouts, halved
Unsalted butter
  • 0.5 cup unsalted butter
Garlic
  • 4 garlic, minced
Hazelnuts or walnuts
  • 0.25 cup hazelnuts or walnuts, toasted
Parmesan
  • 1 cup parmesan, grated
Fresh sage
  • 1 tbsp fresh sage, chopped
Olive oil
  • 2 tbsp olive oil
Pasta water
  • 0.5 cup pasta water
Salt and pepper
  • 1 salt and pepper to taste

Method
 

Roast the vegetables
  1. Heat the oven to 425F. Toss the butternut squash cubes with half the olive oil and a pinch of salt and pepper, spread on a sheet pan, and roast for 25 minutes until caramelized and browned at the edges, turning once if needed for even color.
  2. On a second sheet pan, toss the halved Brussels sprouts with the remaining olive oil and salt and pepper. Roast at 425F for 25 minutes until caramelized and blistered, with darker spots visible.
Cook pasta and make brown butter
  1. Bring a large pot of salted water to a boil and cook the rigatoni or penne according to package directions. Reserve 1 cup of pasta water before draining.
  2. In a cast iron skillet over medium heat, melt the unsalted butter. Add the garlic and chopped sage and cook until the butter turns golden and smells nutty, stirring often, about 3 to 5 minutes with visible golden-brown specks.
Toss and finish
  1. Add the drained pasta to the brown butter and pour in pasta water gradually to loosen into a glossy coating. Toss vigorously for 30 to 60 seconds until clinging, not dry.
  2. Add the roasted butternut squash and roasted Brussels sprouts to the skillet along with grated parmesan. Toss until the vegetables are coated and the parmesan melts into the sauce.
  3. Season with salt and pepper to taste. Top each serving with toasted hazelnuts or walnuts and finish with any extra parmesan if desired.

Notes

Pro tip: roast squash and Brussels sprouts separately so both caramelize without steaming, then toss immediately for the best sauce cling. Refrigerate leftovers in an airtight container up to 3 days; reheat gently with a splash of pasta water. Freezing isn’t recommended because the roasted vegetables can soften and the sauce may break. For a dairy-free swap, use a plant-based parmesan-style topping and omit any additional cheese.
