Ingredients

unsalted butter
  • 1 cup unsalted butter
brown sugar, packed
  • 1 cup brown sugar, packed
granulated sugar
  • 1 cup granulated sugar (Use 1/2 cup granulated sugar as listed in recipe.)
egg plus egg yolk
  • 1 large egg plus 1 egg yolk
vanilla extract
  • 2 tsp vanilla extract
all-purpose flour
  • 2.25 cup all-purpose flour
baking soda
  • 1 tsp baking soda
salt
  • 0.75 tsp salt
dark chocolate chips
  • 1.5 cup dark chocolate chips
toffee bits
  • 0.75 cup toffee bits
flaky sea salt for topping
  • 1 flaky sea salt for topping

Equipment

  • 1 sheet pan
  • 1 cast iron skillet

Method

Brown butter
  1. Heat unsalted butter in a cast iron skillet over medium heat and cook 5-6 minutes until golden and nutty, stirring often so the milk solids brown evenly. The butter should smell toasted and look amber with browned specks; turn off heat and cool 15 minutes.
Make the dough
  1. Whisk the cooled browned butter with brown sugar, packed and granulated sugar until glossy and the sugar looks dissolved. Whisk in the large egg plus 1 egg yolk, then whisk in vanilla extract until smooth.
  2. Stir in all-purpose flour, baking soda, and salt until just combined. Fold in dark chocolate chips and toffee bits so they’re evenly distributed without overmixing.
Chill
  1. Cover the dough and chill for 1 hour in the refrigerator. It should firm up enough to scoop without spreading too fast.
Bake
  1. Preheat the oven to 350F and line sheet pan(s) with parchment. Scoop 2-tablespoon balls onto the parchment-lined sheets, spacing them apart for spreading.
  2. Bake 10-12 minutes at 350F until golden at the edges but still slightly soft in the centers. For a visual cue, the tops will look set and the edges will be deeper brown.
  3. Sprinkle the cookies with flaky sea salt while warm. Cool 5 minutes on the sheet pan so the cookies finish setting before moving them.

Notes

Pro tip: cool the browned butter 15 minutes before mixing so the eggs don’t scramble. Store baked cookies airtight at room temperature for up to 3 days or refrigerate up to 5 days; freeze baked cookies up to 2 months. For a gluten-free swap, use a 1:1 gluten-free all-purpose flour blend that includes xanthan gum (bake time may vary by 1-2 minutes).
