Ingredients

Spiced cider base
  • 1 cup apple cider
  • 2 cinnamon sticks
  • 2 star anise
  • 3 whole cloves
  • 2 tbsp brown sugar
Assemble drink
  • 1 bottle (750 ml) prosecco Chilled
  • 1 apple Thinly sliced
  • 1 cinnamon sugar For the rims

Equipment

  • 1 Dutch oven

Method

Simmer the spiced cider
  1. In a Dutch oven, simmer the apple cider with cinnamon sticks, star anise, whole cloves, and brown sugar for 10 minutes, keeping it at a steady simmer. Watch for the cider to darken slightly and smell strongly spiced.
Strain and chill
  1. Strain the spiced cider through a fine strainer, then chill it completely until cold. The liquid should look clear with no spices floating in it.
Rim the glasses
  1. Rim chilled flutes with cinnamon sugar so a thin, even coating sticks to the edge. Hold the glass at a slight angle so the sugar clings around the rim.
Assemble and serve
  1. Add 2 tablespoons of the chilled spiced cider to each flute. The bottom should be lightly golden and fragrant.
  2. Top each flute with chilled prosecco, then garnish with an apple slice and serve immediately. Look for lively bubbles rising to the top as the apple slice rests at the surface.

Notes

For the cleanest flavor, chill the spiced cider fully before mixing so the drink tastes crisp rather than diluted. Refrigerate the strained spiced cider in a sealed container for up to 4 days; use it straight from the fridge. You can freeze the spiced cider (up to 1 month) and thaw in the refrigerator before assembling. For a lower-sugar option, reduce the brown sugar to 1 tablespoon and taste the base after simmering—adjust to preference.
