Ingredients

bacon
  • 6 slices bacon chopped
onion
  • 1 yellow onion medium, sliced
cabbage
  • 1 green cabbage medium head, cored and chopped
garlic
  • 2 cloves garlic minced
butter
  • 2 tbsp butter
salt
  • 1 tsp salt
black pepper
  • 0.5 tsp black pepper
red pepper flakes
  • 0.25 tsp red pepper flakes
sugar
  • 1 tsp sugar
apple cider vinegar
  • 1 tbsp apple cider vinegar

Equipment

  • 1 cast iron skillet

Method

Fry bacon and build flavor
  1. Cook the chopped bacon in a large cast iron skillet over medium heat for 8 minutes until crisp, then remove the bacon and leave the drippings behind.
  2. Add the sliced onion to the same skillet and cook for 5 minutes until softened, stirring occasionally; stir in the minced garlic for 30 seconds until fragrant.
Caramelize the cabbage
  1. Add the chopped green cabbage along with butter, salt, black pepper, red pepper flakes, and sugar, then stir to coat.
  2. Cook for 12-15 minutes over medium heat, stirring occasionally, until the cabbage is tender and caramelized at the edges (watch for golden patches).
Finish and serve
  1. Stir in the apple cider vinegar and the crispy bacon, then cook for about 30-60 seconds to heat through and lightly gloss the cabbage.
  2. Serve the southern fried cabbage warm straight from the skillet with visible caramelized edges and bacon pieces on top.

Notes

Pro tip: caramelization happens best when you stir only occasionally—let cabbage sit briefly so golden edges form. Store leftovers covered in the refrigerator for up to 4 days; reheat in a skillet over medium heat until hot. Freezing is not recommended because cabbage softens too much. For a lower-sodium swap, use reduced-sodium bacon and reduce added salt slightly to taste.
