Method
Preheat and season
- Preheat oven to 425F, and place a sheet pan in the oven to heat up as it warms.
- Toss potatoes and carrots with 3 tablespoons olive oil, garlic, Italian seasoning, salt, and pepper on the hot sheet pan.
First roast
- Roast for 20 minutes, until the potatoes begin to turn golden at the edges (look for browning on the cubes and coins).
Add zucchini and finish roasting
- Toss zucchini with the remaining oil, then add to the pan and stir to spread everything into an even layer.
- Roast 15 minutes more at 425F until potatoes are crispy and zucchini is tender (browned spots on zucchini are your cue).
Finish and serve
- Sprinkle with Parmesan and parsley, then stir lightly so the cheese melts and the herbs cling to the hot vegetables.
- Serve immediately while the potatoes stay crisp.
Notes
For maximum crisping, spread the vegetables in a single layer and avoid overcrowding the sheet pan. Refrigerate leftovers in a sealed container up to 4 days; reheat on a sheet pan in a 425F oven to re-crisp. Freezing isn’t recommended because zucchini and potatoes lose texture. For a dairy-light option, use a hard dairy-free Parmesan-style topping or omit Parmesan for a lower-sodium swap (flavor will be slightly less nutty).
