Ingredients

Egg base
  • 12 large eggs Use room-temp or slightly warmed eggs for easier peeling.
Deviled egg filling
  • 0.33 cup mayonnaise
  • 2 oz cream cheese Soften before mixing.
  • 1 tsp Dijon mustard
  • 0.25 tsp cayenne pepper
  • 0.25 tsp salt
Topping
  • 0.25 cup red pepper jelly Warm briefly so it loosens for spooning.
  • 4 bacon Cooked and crumbled.
  • 1 fresh chives For garnish.

Equipment

  • 1 sheet pan

Method

Boil and set the eggs
  1. Place 12 large eggs in a pot, cover with cold water, and bring to a boil. Cover the pot, remove from heat, and let stand for 12 minutes.
  2. Chill the eggs in an ice bath for 10 minutes. Peel them, then halve lengthwise.
Make the deviled filling
  1. Mash the yolks with mayonnaise, cream cheese, Dijon mustard, cayenne pepper, and salt until smooth. Stop when the mixture looks creamy and uniform with no yolk lumps.
Fill and finish
  1. Pipe the filling into the egg whites. Fill each half fully so the tops are level.
  2. Warm the red pepper jelly for 10 seconds to loosen it. Spoon a little onto each egg so it forms a glossy dot.
  3. Top with bacon and fresh chives. Add bacon bits first, then scatter chives for a bright green finish.

Notes

For the cleanest filling, pipe while the yolk mixture is still soft and smooth; if it thickens, stir in a teaspoon of mayonnaise. Refrigerate assembled deviled eggs in a covered container up to 3 days—do not freeze for best texture. For a gluten-free swap, keep everything as written since the recipe is naturally gluten-free; you can also use reduced-sodium Dijon and salt if desired.
