  • 3 ripe pears peeled, cored and chopped
  • 2 lb Yukon gold potatoes peeled and cubed
  • 1 onion diced
  • 2 garlic cloves, minced
  • 4 cup vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tbsp fresh thyme leaves
  • 0.25 tsp nutmeg
  • 0.25 tsp white pepper
  • 0.5 tsp salt to taste

  • 0.5 cup crumbled gorgonzola or blue cheese
  • 0.5 cup candied walnuts
  • 1 tbsp honey drizzle
  • 1 tbsp fresh thyme for garnish

Method
 

Sauté the aromatics
  1. Melt 2 tablespoons unsalted butter in a large pot over medium heat. Sauté the diced onion for 5 minutes until soft and golden, stirring occasionally.
  2. Add the minced garlic and cook for 1 minute. Keep it moving so it becomes fragrant without browning.
Simmer until tender
  1. Add 4 cups vegetable or chicken broth, the cubed Yukon gold potatoes, and the chopped pears to the pot. Stir to combine and scrape up any browned bits from the bottom.
  2. Add 1 tablespoon fresh thyme leaves to the pot. Bring the soup to a boil, then simmer for 25 minutes until both potatoes and pears are completely tender, with gentle bubbles throughout.
Blend and finish
  1. Blend the soup completely smooth with an immersion blender. Blend until no chunks remain and the texture looks silky and thick.
  2. Stir in 1 cup heavy cream. Season with 1/4 teaspoon nutmeg, 1/4 teaspoon white pepper, and salt to taste, then heat just until steaming.
Serve
  1. Ladle the soup into bowls. Top each serving with crumbled gorgonzola or blue cheese, candied walnuts, and a drizzle of honey for contrast.
  2. Finish with fresh thyme on top. Serve immediately while the soup is hot and the toppings stay crisp.

Notes

Pro tip: blend while the soup is hot so it turns out fully smooth, then warm again after adding the cream to keep the texture silky. Store in an airtight container in the refrigerator up to 4 days; reheat gently on the stovetop or microwave, adding a splash of broth if it thickens. Freezing is not recommended for the creamiest texture, but you can freeze if needed and thaw/reheat carefully. If you want a lighter option, swap heavy cream for half-and-half or evaporated milk and add slowly while stirring.
