Ingredients
  

Watermelon and peaches
  • 6 cup seedless watermelon cubed
  • 4 ripe peaches sliced
Lime-honey dressing
  • 0.25 cup fresh mint leaves torn
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 0.5 tsp lime zest
  • 0.1 flaky sea salt pinch
Optional topping
  • 0.25 cup crumbled feta cheese optional

Method
 

Combine the fruit
  1. Add the cubed seedless watermelon and sliced ripe peaches to a large wide bowl and spread them out in an even layer for better coating.
  2. Whisk the lime juice, honey, and lime zest together until the honey dissolves and the mixture looks glossy.
  3. Pour the lime dressing over the watermelon and peaches and toss gently until all fruit is lightly coated without crushing.
Finish and serve
  1. Scatter the torn fresh mint leaves over the top so they stay bright and fragrant.
  2. Sprinkle in a pinch of flaky sea salt and add the crumbled feta cheese if using for extra tangy contrast.
  3. Serve immediately, or refrigerate for up to 1 hour before serving for a cooler, crisper bite.

Notes

For clean, juicy bites, cube the watermelon right before mixing and slice peaches just as you’re ready to toss. Store covered in the refrigerator up to 1 hour only (texture softens after that); freezing is not recommended. Dietary swap: omit the feta to keep the salad dairy-free.
