Ingredients
  

bourbon

peach

mint

honey

lemon juice

Method
 

Muddle and sweeten
  1. Place peach slices, mint leaves, and honey in a cocktail shaker or glass and muddle firmly for 20–30 seconds, until the peach releases its juice and the mint smells fragrant.
Shake with bourbon
  1. Add bourbon, fresh lemon juice, and a handful of ice to the shaker, then shake vigorously for 15 seconds to chill the mixture.
Build over crushed ice
  1. Fill a lowball glass with crushed ice, then strain the cocktail over the ice (or pour unstrained for a more rustic style) to keep the texture icy and aerated.
Top and garnish
  1. Top with a splash of sparkling water if desired, then garnish with a peach slice and a mint sprig for a fragrant finish.
