Oreo s'mores are a camping classic with a roasted marshmallow sandwiched between two Oreo cookies for a melted, gooey cookie s'mores bite. Quick to assemble and served warm, the marshmallow oozes out right as you press the cookies together.

Oreo S'mores
  • 24 Oreo cookies Keep the cream filling intact on one side of each cookie.
  • 12 large marshmallows Use large marshmallows so they stay pillowy and gooey after roasting.
  • 1 Roasting sticks For threading and roasting the marshmallows over a campfire.

Method
 

Separate the cookies
  1. Separate Oreo cookies, keeping the cream filling intact on one side of each cookie.
  2. Set up the roasted marshmallow assembly by keeping the filled cookie halves together in pairs.
Roast marshmallows
  1. Thread marshmallows onto roasting sticks.
  2. Roast marshmallows over campfire until golden brown and gooey (about 3 minutes), turning as needed for even browning.
Assemble the s'mores
  1. Place a roasted marshmallow on one Oreo cookie half and top with another cookie half to sandwich.
  2. Press gently to spread marshmallow so it oozes slightly at the edges.
  3. Let cool for 1 minute before eating.

Notes

Pro tip: keep the cream on the cookie that goes on the inside of the sandwich so the center stays creamy when the marshmallow melts. Store leftovers in an airtight container in the fridge up to 2 days; rewarm briefly in the microwave for 10-15 seconds if desired. Freezing is not recommended because the marshmallow and cookie texture changes. For a dairy-light option, use dairy-free marshmallows and swap in an Oreo-style sandwich cookie alternative if available.
