Method
 

Make the simple syrup
  1. Combine granulated sugar and water in a saucepan over medium heat and stir until fully dissolved, about 3 minutes.
  2. Remove from heat and cool completely, 5 minutes, so the syrup doesn’t melt the sorbet while blending.
Blend the sorbet
  1. Blend fresh or frozen mango chunks with the cooled simple syrup, lime juice, lime zest, and salt until completely smooth, about 1 minute.
  2. Strain the blended mixture through a fine mesh sieve if you want an extra-smooth sorbet texture.
Freeze or churn
  1. Pour the mixture into a shallow freezer container and freeze 4 hours, stirring every hour, until set and scoopable.
  2. Alternatively, pour into an ice cream maker and churn 20–25 minutes, until thickened like soft-serve sorbet.
Serve
  1. Spoon the mango sorbet into bowls and top with fresh mint for serving, serving immediately with a lime wedge.

Notes

For the smoothest texture, cool the syrup completely before blending and stir the sorbet every hour during freezing to break up ice crystals. Store leftovers covered in the freezer up to 2 weeks; scoop straight from the cold container and let sit 2–3 minutes to soften. Freezing is not just okay—it’s the point of this recipe.
