Preheat and prep the pan
- Preheat oven to 425F and line a 12-cup muffin tin.
- Position the oven rack so the muffins bake in the center of the oven for even doming.
Mix dry and wet separately
- Whisk all-purpose flour, cocoa powder, baking powder, baking soda, espresso powder, and salt in a bowl.
- Whisk granulated sugar, brown sugar, eggs, buttermilk, vegetable oil, cooled strong brewed coffee, and vanilla until smooth.
Combine and fill
- Fold the dry ingredients into the wet mixture until just combined, then fold in dark chocolate chips.
- Fill each muffin cup to the very top and sprinkle espresso powder for topping over each one.
Bake for tall domed tops
- Bake at 425F for 5 minutes until the tops begin to rise and set.
- Reduce oven temperature to 350F and bake 13-15 more minutes, until a toothpick in the center comes out with moist crumbs.
- Let muffins cool in the pan for a few minutes so the domes hold their shape.

Pro tip: fold just until the flour disappears—overmixing toughens muffins. Store airtight at room temperature up to 3 days or refrigerate up to 5 days; rewarm 10-15 seconds in the microwave. Freeze up to 2 months. If you want a lower-sugar option, reduce granulated sugar by about 1/4 cup and keep the rest the same for structure.
