Ingredients

Creamy Cauliflower Soup
  • 2 cauliflower Large heads, cut into florets; reserve some florets for garnish.
  • 1 onion Diced.
  • 6 garlic Minced.
  • 4 cup broth Vegetable or chicken broth.
  • 1.5 cup heavy cream
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil Used to toss reserved florets.
  • 0.25 tsp nutmeg
  • 0.25 tsp white pepper
  • truffle oil For garnish/drizzle.
  • chives For garnish.
  • crispy cauliflower Roasted caramelized florets reserved from the cauliflower.
  • salt To taste.

Equipment

  • 1 Dutch oven
  • 1 cast iron skillet

Method

Roast garnish florets
  1. Toss the reserved cauliflower florets with olive oil, then roast at 425°F for 20-25 minutes until golden and caramelized. Set aside for garnish.
Cook the soup base
  1. Melt the unsalted butter in a large pot, then sauté the diced onion for 5 minutes until softened. Add the minced garlic and cook for 1 minute, until fragrant.
  2. Add the remaining cauliflower and broth, bring to a boil, then simmer for 20 minutes until very tender. Keep it at a steady simmer so the cauliflower softens fully.
Blend and finish
  1. Blend completely smooth with an immersion blender until the soup is silky with no visible cauliflower bits. Stir to confirm an even texture.
  2. Stir in the heavy cream, nutmeg, and white pepper, then cook briefly just to reheat, keeping the surface steamy but not boiling. The soup should look ivory and glossy.
  3. Season with salt to taste, then serve with the roasted crispy cauliflower, truffle oil drizzle, and chives. Finish each bowl with a visible swirl or drizzle for contrast.

Notes

Pro tip: Blend while the soup is hot for a truly smooth texture; if your immersion blender stalls, blend in batches. Store in the refrigerator up to 4 days; reheat gently over low heat, stirring until creamy. Freezing is not recommended because the cream can separate after thawing. For a lighter option, replace half the heavy cream with extra broth and finish with an additional splash of olive oil instead of extra cream.
