Ingredients

Hawaiian rolls or slider buns
  • 12 Hawaiian rolls or slider buns
Breakfast sausage
  • 1 lb breakfast sausage Cooked and crumbled
Eggs
  • 8 eggs Scrambled
Sharp cheddar
  • 1.5 cup sharp cheddar Shredded
Bacon
  • 4 bacon Cooked and crumbled
Jalapeños and hot sauce (optional)
  • 1 sliced jalapeños Optional
  • 1 hot sauce Optional
Butter glaze
  • 4 tbsp melted butter
  • 1 tbsp Dijon
  • 0.5 tsp garlic powder
  • 1 tsp Worcestershire
  • 1 tsp everything bagel seasoning

Equipment

  • 1 sheet pan

Method

Prep the baking dish and rolls
  1. Preheat the oven to 350F and grease a 9x13 baking dish.
  2. Slice all Hawaiian rolls in half horizontally, keeping the tops and bottoms together, so they hinge like slider buns.
  3. Place the bottom halves in the greased dish in an even layer.
Layer the filling
  1. Scramble the eggs until set, then spoon them over the roll bottoms.
  2. Layer the cooked and crumbled breakfast sausage over the eggs.
  3. Add the cooked and crumbled bacon in an even layer.
  4. Scatter sliced jalapeños over the top as desired.
  5. Sprinkle the shredded sharp cheddar over the layers.
  6. Place the top halves over everything to close the sliders.
Glaze, season, and bake
  1. Whisk the butter glaze ingredients together, then brush generously over the tops.
  2. Sprinkle additional everything bagel seasoning over the glazed tops with a visible speckled coating.
  3. Bake for 20-25 minutes at 350F until the tops are golden and the cheese is fully melted.

Notes

Pro tip: use warm, freshly baked scrambled eggs for better melting and fewer gaps in the layers. Store covered in the refrigerator for up to 3 days; reheat in the oven or microwave until hot. Freezing is not recommended because the rolls can soften after thawing. For a lighter option, swap in turkey sausage while keeping the bacon optional.
