Sauté aromatics
- Melt unsalted butter in a large pot over medium heat. Add onion and sauté for 5 minutes until softened, then add garlic and cook for 1 minute until fragrant.
Simmer potatoes
- Add chicken broth and russet potatoes to the pot, then bring to a boil. Reduce to a simmer and cook for 20 minutes, stirring occasionally, until very tender.
Blend and make creamy
- Use an immersion blender to blend most of the soup until smooth, leaving some potato chunks for texture.

- Stir in shredded white cheddar or sharp cheddar until melted. Season with salt, white pepper, and garlic powder.
Serve
- Ladle the potato soup into bowls and top each serving with bacon bits, extra cheddar, and chives.
