Whip and mix
- Whip the heavy cream to stiff peaks in a stand mixer, so it holds clear ridges when you lift the beaters.
- Whisk sweetened condensed milk, yellow cake mix, vanilla extract, butter extract, and salt together until the cake mix is fully incorporated and no dry powder remains.
Combine and freeze
- Fold the condensed milk mixture gently into the whipped cream until no white streaks remain and the mixture looks uniform.
- Fold in the rainbow sprinkles just until evenly distributed, then stop mixing to avoid bleeding color.
- Transfer the mixture to a 9x5 loaf pan and freeze at -0°F to 0°F for at least 6 hours or overnight until firm enough to scoop.
Notes
For the smoothest texture, use very cold heavy cream and fold gently so the air you whipped stays intact. Cover and store leftovers in the freezer for up to 2 weeks; for best scoopability, let sit 5 minutes at room temperature before serving. Freezing is not recommended for already-scooped portions that have been kept at serving temperature. Dietary swap: use a no-sugar-added sweetened condensed milk if available to reduce sugar while keeping the same method.
