Cook the ranch chicken
- Season the chicken breast with half the ranch seasoning mix. Heat the olive oil in a cast iron skillet over medium-high and add the chicken.
- Cook until cooked through, 4-5 minutes per side. The chicken should look opaque throughout with light browning on the edges.
- Remove the chicken from the skillet and rest briefly, then slice thin. Keep any juices with the chicken for extra flavor.
Cripsy griddle tortilla shells
- Fold each flour tortilla in half. Griddle in a dry cast iron skillet over medium heat until crispy.
- Cook each folded tortilla until crispy on both sides and cheddar melts inside, adding shredded sharp cheddar if needed. Look for browned, crisp edges and melted cheese at the seam.
Assemble the tacos
- Fill each crispy taco shell with ranch chicken, bacon, romaine lettuce, cherry tomatoes, and red onion. The toppings should sit high so each bite is packed.
- Drizzle with ranch dressing and dust with the remaining ranch seasoning mix. Finish with a light, even shake so the top is speckled.
Notes
Pro tip: Keep the skillet hot for the tortillas so the shells turn crisp quickly; if cheese isn’t melting, add a small pinch of cheddar at the fold before closing the taco. Refrigerate leftovers in an airtight container up to 3 days; assemble toppings fresh when reheating for best crunch. Freezing isn’t recommended for assembled tacos (tortillas soften). Dietary swap: use turkey bacon for a lighter option while keeping the ranch-seasoned chicken and cheddar.
