Prep and build the bean base
- Preheat the oven to 325F. Make sure your Dutch oven is ready for assembling so the beans go in right away.
- Cook the chopped thick-cut bacon in the Dutch oven over medium heat until crispy, then remove and set aside. Leave the bacon drippings in the pot for extra smoky flavor.
- Saute the diced onion in the bacon drippings for 4 minutes until softened. Scrape up any browned bits, then add the minced garlic for 1 more minute.
- Add the drained and rinsed navy or pinto beans, diced fresh peaches, BBQ sauce, brown sugar, molasses, apple cider vinegar, Worcestershire sauce, and smoked paprika, then stir to combine. Mix until the beans and peaches are evenly coated in the dark, sweet BBQ base.
- Return the crispy bacon to the pot and season with salt and pepper to taste. Stir so the bacon is distributed before baking.
Bake and caramelize the top
- Cover and bake at 325F for 45 minutes. The mixture should be bubbling around the edges with sauce thickening throughout.
- Uncover and bake at 325F for 15 more minutes until the top is thickened and caramelized. Look for a glossy, sticky surface with browned spots where the sauce reduces.
Notes
For thicker, spoonable beans, avoid stirring during the uncovered bake so the top can caramelize. Store leftovers in the fridge up to 4 days; reheat gently in a covered pot. Freezing is yes—freeze in portions up to 3 months and thaw overnight in the fridge, then reheat. For a lighter option, swap thick-cut bacon for turkey bacon (or omit and add 1–2 tsp smoked paprika extra) while keeping the same BBQ sauce base.
