Ingredients

  • 2 lb ground turkey
  • 2 apples peeled and diced
  • 2 can (15 oz) white beans drained
  • 1 onion diced
  • 4 garlic minced
  • 2 celery diced
  • 2 cup chicken broth
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp fresh sage chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme
  • 1 tsp cumin
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • sour cream for serving
  • cheddar for serving
  • salt to taste
  • pepper to taste

Equipment

  • 1 Dutch oven

Method

Brown and season
  1. Brown the ground turkey in a large pot over medium-high heat, then drain the fat.
  2. Sauté the onion, celery, and diced apples for 5 minutes, then add the garlic, fresh sage, thyme, cumin, chili powder, and smoked paprika and cook 2 minutes.
Simmer the chili
  1. Add the diced tomatoes, chicken broth, and drained white beans, then bring the mixture to a boil.
  2. Simmer for 20-25 minutes, stirring occasionally, until flavors meld and the apples have softened into the chili.
Finish and serve
  1. Season with salt and pepper to taste, then serve with sour cream and cheddar on top.

Notes

For the best texture, simmer gently so the apples soften without breaking down completely. Store leftovers in the refrigerator up to 4 days; reheat on the stovetop or microwave until hot. Freezing is yes: cool fully, freeze airtight up to 3 months, and thaw in the fridge before reheating. For a lighter option, use 93% lean ground turkey or substitute ground turkey breast.
