  • 0.5 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp salt
Wet ingredients
  • 1 cup unsalted butter, softened

  • 0.75 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
Add-ins
  • 2 cup white chocolate chips

Equipment

  • 1 sheet pan

Method

Prep
  1. Preheat oven to 350F and line baking sheets with parchment for easy release and even baking.
  2. Whisk all-purpose flour, unsweetened cocoa powder, baking soda, and salt until the mixture looks uniform in color.
Make the dough
  1. Beat softened unsalted butter with brown sugar and granulated sugar until fluffy and lighter in color.
  2. Beat in large eggs and vanilla extract until smooth and glossy.
  3. Mix in the dry ingredients until just combined, then fold in white chocolate chips so the dough stays tender.
Bake
  1. Scoop 2-tablespoon balls onto the sheets, spacing them apart for spread.
  2. Bake at 350F for 10-11 minutes, until edges are set and tops look crackly.
  3. Cool for 5 minutes on the sheet before moving to help them firm up without breaking.

Notes

For the crinkly tops, don’t overmix after adding the dry ingredients—stop as soon as no dry streaks remain. Store cookies in an airtight container at room temperature for up to 4 days; freeze baked cookies up to 2 months. For a dairy-free swap, use a 1:1 plant-based butter stick and confirm the white chocolate chips are dairy-free.
