Ingredients

Chicken poblano soup base
  • 1.5 lb chicken breast Cooked and shredded
  • 3 poblano peppers Roasted, peeled, and diced
  • 1 cup corn kernels
  • 1 onion Diced
  • 4 cloves garlic Minced
  • 4 cup chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp chili powder
  • 1 lime Juice
  • sour cream For serving
  • cilantro For serving
  • green onions For serving
  • tortilla strips For serving
  • salt To taste
  • black pepper To taste

Equipment

  • 1 sheet pan
  • 1 Dutch oven

Method

Roast the poblanos
  1. Roast the poblano peppers under the broiler on a sheet pan until charred, about 8–10 minutes, turning once so the skin blisters evenly. Let them rest until cool enough to handle, then peel, seed, and dice.
Build the soup
  1. Melt the butter in a large pot over medium heat, then sauté the onion for 4 minutes until softened and glossy. Stir in the garlic, cumin, smoked paprika, and chili powder and cook for 2 minutes until fragrant.
  2. Add the chicken broth, corn, and half the diced poblanos, then bring to a simmer. Simmer for 15 minutes, stirring occasionally, until the flavors meld.
  3. Partially blend the soup until thick but still chunky, then stir in the heavy cream. Blend carefully and return to a gentle simmer as needed.
  4. Add the shredded chicken, remaining poblanos, and lime juice, then simmer for 5 minutes until the chicken is hot throughout. The broth should look creamy and lightly speckled with poblano.
  5. Season with salt and black pepper to taste, then turn off the heat. Serve with sour cream, cilantro, green onions, and tortilla strips so each bowl has a visible swirl and topping pile.

Notes

Pro tip: partially blend (not fully) so you keep smoky poblano texture instead of turning the soup uniformly smooth. Refrigerate leftovers in a sealed container up to 4 days; freeze up to 2 months (add fresh lime and adjust cream after thawing for best texture). For a lighter option, use half-and-half instead of heavy cream.
