Ingredients

Cinnamon sugar rim mixture
  • 2 tbsp sugar
  • 1 tsp ground cinnamon
Mimosa base and topping
  • 2 cup apple cider chilled
  • 1 750 ml champagne or prosecco chilled
Garnish and serving
  • 1 apple thinly sliced
  • 1 cinnamon sticks for garnish

Method

Make the cinnamon sugar rim
  1. Mix sugar and ground cinnamon on a small plate until evenly combined.
  2. Wet the rims of the flutes with chilled apple cider, then dip the rims into the cinnamon sugar and set aside with the coated rims facing up.
Build the mimosas
  1. Fill each flute one third full with chilled apple cider.
  2. Top each flute with chilled champagne or prosecco, then garnish with a thin apple slice and a cinnamon stick before serving.

Notes

For the cleanest rim, chill both the apple cider and your champagne/prosecco and dip right after wetting so the sugar adheres. Store any leftover apple cider mixture (without champagne) covered in the fridge up to 2 days; do not freeze because bubbles won’t be preserved. For a lighter option, use an alcohol-reduced sparkling wine or add extra chilled cider and reduce champagne/prosecco slightly.
